Although kitchen knives are very versatile, they aren't nearly as helpful as some of us believe. They feature an all-steel construction, a full-length throwing knife that is nearly five feet long when fully-grown, a serrated edge that is tough, and a tip that can be quickly and easily changed by using an easily gripped extension spring. Some knives in the Kershaw collection have a safety lock, which prevents the knife from being opened while it is within the user's hand.
